  • 500g boneless mutton (or beef), cleaned and diced
  • ½ cup chana dal (split Bengal gram), soaked for 30 minutes
  • 10–12 garlic cloves
  • 4–5 green chilies, chopped (optional)
  • 1½ tbsp ginger-garlic paste
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder (adjust to taste)
  • Salt to taste
  • 1 tsp garam masala powder
  • Fresh mint and coriander leaves, chopped
  • Lemon or lime juice
  • Oil for shallow-frying

How to Make Hyderabadi Shami Kabab

1. Cook the Mixture

In a pressure cooker or heavy-bottom pan, add the mutton, soaked chana dal, garlic, green chilies, turmeric, red chili powder, and salt. Pour enough water to cover the mixture. Cook until the meat and dal become soft and fully tender.

2. Cool & Grind

Let the mixture cool completely. Add garam masala, mint, and coriander leaves. Grind everything into a thick, coarse paste. Do not over-grind, as texture is important.

3. Shape & Fry

Divide the mixture into small portions and shape them into oval or round patties. Heat oil in a pan and shallow-fry the kababs on medium flame until crisp and golden brown.

4. Serve

Serve hot with khatti dal, khatte ki kadhi, tomato chutney, or enjoy with rice or parathas.
